Vegan scrambled eggs with Kala Namak (Tofu Scramble)

Preparation time: 15 minutes
Ingredients:
- 200 g firm tofu (natural)
- 1 small onion, finely chopped
- 1 garlic clove, finely chopped
- 2 tbsp vegetable oil (e.g. rapeseed oil)
- ½ tsp turmeric (for color)
- 1 tsp paprika powder
- 1–2 pinches of Kala Namak salt (to taste)
- Salt & black pepper as needed
Optional: fresh herbs, diced tomatoes, spinach, yeast flakes
Preparation:
- Roughly crumble the tofu with your hands or a fork – it should look like scrambled egg pieces.
- Heat oil in a pan, fry onion and garlic until translucent (approx. 2 minutes
- Add tofu and fry over medium heat for about 5 minutes.
- Stir in turmeric, paprika powder, salt and pepper.
- At the very end add Kala Namak (do not fry, otherwise it will lose its flavor).
- Garnish with herbs, tomatoes or spinach if desired.
Serving suggestion:
Serve with fresh bread, avocado, or roasted mushrooms – perfect for breakfast or brunch! 🥚
