Vegan scrambled eggs with Kala Namak (Tofu Scramble)

Servings: 2
Preparation time: 15 minutes

Ingredients:

  • 200 g firm tofu (natural)
  • 1 small onion, finely chopped
  • 1 garlic clove, finely chopped
  • 2 tbsp vegetable oil (e.g. rapeseed oil)
  • ½ tsp turmeric (for color)
  • 1 tsp paprika powder
  • 1–2 pinches of Kala Namak salt (to taste)
  • Salt & black pepper as needed

Optional: fresh herbs, diced tomatoes, spinach, yeast flakes

Preparation:

  1. Roughly crumble the tofu with your hands or a fork – it should look like scrambled egg pieces.
  2. Heat oil in a pan, fry onion and garlic until translucent (approx. 2 minutes
  3. Add tofu and fry over medium heat for about 5 minutes.
  4. Stir in turmeric, paprika powder, salt and pepper.
  5. At the very end add Kala Namak (do not fry, otherwise it will lose its flavor).
  6. Garnish with herbs, tomatoes or spinach if desired.

Serving suggestion:

Serve with fresh bread, avocado, or roasted mushrooms – perfect for breakfast or brunch! 🥚
