Sushi bread: A touch of Japan on crispy country bread

Ingredients for 1 serving:

  • 2 slices of country bread
  • 1 ripe avocado
  • 1 pinch of seaweed salt (to taste)
  • ½ lime (juice)
  • 1 tbsp chopped coriander
  • A few pieces of smoked salmon
  • Some olive oil
  • ½ tsp roasted sesame seeds

Preparation:

  1. Mash the avocado flesh with a fork. Season with seaweed salt, lime juice, and coriander .
  2. Toast the bread slices in a pan with a little olive oil until crispy .
  3. Spread the avocado cream on the toast.
  4. Spread the smoked salmon on top and sprinkle with the remaining coriander.
  5. Finally, top with toasted sesame seeds and another pinch of seaweed salt.
